It's made from the Kalo (or Taro) plant ( a staple of Polynesian culture) You mash it (usually after cooking/steaming it) with a bit of water, into a paste-like substance ranging from liquid to dough-like and then eat. It's sweetest when fresh and slowly turns sour after it ferments a little. Usually eaten with two to three fingers. The Hawaiians believed that the Kalo plant represented their ancestors and the presence of the Poi was normal for every meal.

The best example is to say it resembles library paste, but is purple in color. While not a fan of Poi I do like the Taro chips. Basically purple sweet potato chips.
