They do have kefir in them. Amanda, do you have the "More with Less" cookbook? That's where I got the recipe, I just sub. the milk for kefir. I also have to double the recipe for our family and there are none leftover if Mat eats with us.
To double it,
2 cups Cottage cheese
8 eggs
1 cup kefir or milk
1/2 cup olive oil
1 cup soft/pastry whole wheat flour
1 tsp sea salt
1 tsp vanilla

Joy, I cook them on a non-stick griddle at 350 degrees sprayed with oil. If they stick, it's really hard to flip them without tearing them. The one in this pic is as big as my plate but I rolled it. They're thin, like a crepe. My family loves these!!
