@jackied: i've never shot a deer, although I have gone with to help spot them, but I have shot many, many gophers, which we have never eaten. :)

I've heard it called "Loin". When we got ours back from Kents meat there was only 1 pound of backstrap. When I've butchered my own in the past I had around 8-10 pounds of "backstrap". I called them and they said it was loin and backstrap.
